Ingredients

1 quart heavy cream

1 vanilla bean (scraped)

1 cup sugar

6 large egg yolks

Directions

  1. Preheat oven to 325°F.

  2. Add cream and vanilla bean (scraped and have) to pot on medium-high heat, heat to boil, cover and rest 15 minutes.

  3. Beat egg yolks and sugar to a light pale yellow, temper and beat in cream.

  4. Add mixture to ramekins and bake in ban marie approximately 40 to 45 minutes.

  5. Refrigerate for 2 to 3 hours, will keep for three days

Notes

2 teaspoons of vanilla extract works just fine, you can also use other extracts to flavor like rum extract or almond extract or I like to add pistachio flavoring in a little bit of green food coloring. I’m told you can also do it with chocolate, but I have never tried. I want to try with orange extract and zest.
