Low Effort Peanut Noodles

Ingredients

16 ounces dry udon noodles

4 scallions, divided

SAUCE:

⅓ cup creamy peanut butter

⅓ cup soy sauce

⅓ cup unseasoned rice vinegar

2 tablespoons, plus 2 teaspoons sesame oil, divided

2 teaspoons chili oil (more or less to taste, depending on spice preference)

1 teaspoon toasted sesame seeds

Directions

Cook udon according to package.

In a bowl, whisk the peanut butter, soy sauce, rice vinegar, 2 tablespoons sesame oil, and 2 teaspoons chili oil until smooth and creamy. Taste and adjust ingredients as necessary.

Drizzle the scallions with two teaspoons sesame oil and toss to coat. Season with flaky sea salt and the toasted sesame seeds and toss.

Combine sauce with noodles, stirring to coat. Add scallions on top. Serve.
