Best Rolls Ever ( aka Potato Rolls)

**MAKE**
1 cup mashed potatoes
**MIX**
1 package dry yeast, 1/2 cup lukewarm reserved potato water + 1 tsp sugar
**WHISK**
mashed potatoes
2/3 cup soft butter
2 eggs
1/3 cup granulated sugar
2 Tablespoons honey
1 teaspoon salt
**ADD**
360 grams AP-flour ( 3 cups )
381 grams bread flour ( 3 cups )
Directions
PREHEAT: Bake to 350. Bake about 15 minutes check.
1. Boil potatoes until tender. Reserving 1/2 cup potato water for use in rolls . Finely mash potatoes and measure 1 cup for rolls. COOL potatoes to nearly room temperature.
2. Dissolve yeast in the lukewarm potato water with 1 teaspoon sugar added. Set aside for 5 minutes. ( It should be foamy after 5 minutes.)
3. In large bowl whisk together mashed potatoes, butter, eggs, sugar, honey and salt until smooth.
4. Add yeast mixture to lukewarm milk. Stir. Add the yeast and milk to the pot mixture, blend.
5. Gradually add flour 1 cup at a time until a soft dough is reached, knead for about 8 minutes.
6. Place dough in lightly oiled box, and let rise until doubled.
7.Punch dow and shape into 24 rolls. Place rolls about 1 1/2 inch apart on parchment lined baking sheets.
8. Sprinkle rolls with a touch of rice flour. Let roll rise again.
