Honey Garlic Chicken

4 boneless, skinless chicken breasts
Salt and black pepper, to taste
2 tablespoons olive oil
4 cloves garlic, minced
1/3 cup honey
1/4 cup soy sauce
2 tablespoons apple cider vinegar
1 tablespoon cornstarch mixed with 2 tablespoons water
1 teaspoon sesame oil (optional)
2 tablespoons chopped green onions, for garnish
Directions
Prepare the chicken:
Season the chicken breasts with salt and black pepper on both sides.
Cook the chicken:
In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for 5-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
Make the sauce:
In the same skillet, reduce the heat to medium and add the minced garlic. Sauté for about 1 minute until fragrant, being careful not to burn it.
Stir in the honey, soy sauce, and apple cider vinegar, and bring the mixture to a simmer.
Thicken the sauce:
Add the cornstarch mixture to the skillet, stirring continuously until the sauce thickens, about 1-2 minutes. Stir in the sesame oil, if using.
Coat the chicken:
Return the chicken breasts to the skillet, turning to coat them evenly with the sauce. Let them simmer in the sauce for an additional 2-3 minutes to absorb the flavors.
Serve:
Transfer the honey garlic chicken to a serving platter and garnish with chopped green onions and sesame seeds. Serve with rice or your choice of side dishes.
