Chocolate Pudding Cake
This pudding cake is hard to describe, but during baking, it essentially forms a chocolate pudding on the underside of a dense chocolate cake. it's fantastic, and wonderful as a treat.
1 cup flour
3/4 cup sugar
3 tablespoons cocoa
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup milk
2 tablespoons oil
1 teaspoon vanilla
3/4 cup brown sugar
1/4 cup cocoa
1 3/4 cups boiling water
Heat oven to 350°. In a mixing bowl, stir together flour, sugar, 3 tablespoons cocoa, baking powder and salt. Mix in milk, oil and vanilla. Spread the batter evenly in a lightly buttered 8”-inch square baking pan. Combine brown sugar and 1/4 cup cocoa; sprinkle over the batter. Slowly pour boiling hot water over the batter and brown sugar-cocoa mixture.
Bake for (important > if you use a toaster oven I wouldn’t go much past 30-32 minutes max 40 minutes in a regular oven. If you go much more the pudding cooks into the cake).
Let cool at least 5 minutes (trust me, it's molten hot). scoop with a spoon into a bowl, it's awesome with vanilla ice cream. Also awesome for breakfast.
