Homemade Chicken Shawarma

Ingredients

1 yellow onion, peeled & halved

3Tbs Greek yogurt

⅓ C fresh lemon juice

3 cloves garlic, grated

2 tsp paprika

½ tsp cumin

½ tsp oregano

½ tsp red pepper flakes

½ tsp turmeric

½ tsp coriander

½ tsp allspice

pinch of cinnamon

2 tsp salt

3 chicken breasts

3 chicken thighs

Directions

Combine the marinade ingredients and toss the chicken to coat well. Marinate a minimum of 30 minutes but best to marinate overnight. Place onion flat side down on a baking sheet. Stick one skewer in the middle of each onion half and then string the chicken over top to create a tower. Bake chicken in a 400° preheated oven for an hour or until you reach an internal temperature of 165°.

Combine half a thin, sliced red onion with 1 Tbs fresh lemon juice, 1 Tbs sumac, and salt to taste. Then let marinate for 10 minutes. I like to serve it on top of the discard flatbread recipe posted on my page, along with toum, French fries, tomatoes and cucumbers. SO GOOD!
