Udon Noodles 800 g
Onion 1
Carrot 1
Zucchini 1
Green Beans 200 g
Oyster Mushrooms 400 g

SAUCE
Water 100 ml
Soy Sauce 50 ml (25 ml light & 25 ml dark)
Sesame Oil (10 ml)
Rice Vinegar (10 ml)
Maple Syrup (5 ml)
Garlic Powder
Chilli Paste
Directions
PREP
Cut the Onion, Carrot and Zucchini in fine Stripes.
Shred the Oyster Mushrooms with your hands and drain excess water with a towel.
Whisk the Sauce ingredients together in a bowl.
COOKING
Air-fry the Oyster Mushrooms for 10 min. at 200 degrees.
Boil the Green Beans for 15 min.
In the same pot boil the eggs for 6-8 min.
Sauté the Onion, Carrot, Zucchini and the strained Green Beans in Olive Oil.
Season with Salt and Pepper.
Boil the Udon Noodles for 2-3 min.
FINISH
Strain the noodles and add them to the pan with the vegetables.
Add the sauce, turn off the heat and finish cooking by stirring continuously.
Serve in a bowl and add a boiled egg cut in half.
