Zwiebelkuchen (Onion Cake)

450 g flour

220 ml water

50 g butter, softened

1 packet of dry yeast

1 pinch of salt

1 pinch of sugar

800 g onions

200 g bacon

1 tbsp oil

1 tbsp butter

3 eggs

200 ml cream

250 g cheese

Directions

Place the flour, yeast, sugar, and salt in a bowl. Make a well in the center, pour in the cold water, and add the softened butter. Knead everything into a dough. Let the dough rest for about 30 minutes.

Later, roll out the dough on a floured work surface to the size of a baking tray. Place it on the tray and press the edges upward.

For the topping, blend the eggs and cream with an immersion blender and season with salt, nutmeg, and pepper.

Peel the onions, halve them, and cut into strips. Dice the bacon. Sauté both in a pan with butter and oil until golden. Remove the pan from the heat, add the egg mixture, and stir it in. Adjust the seasoning if needed.

Spread the topping over the dough, sprinkle with cheese, and bake in a preheated oven at 200 °C (top/bottom heat) for about 30 minutes.

This pairs well with Federweißer (young wine) or a well-chilled white wine.
