Ingredients

1 cup stone-ground grits

1/2 teaspon salt

2 tablespoons butter

Directions

Bring 4 cups of water to a boil in a medium pot.

Add the grits and salt, reduce the heat to low and cook for 25 minutes, stirring occasionally.

Add the butter and cook for 5 minutes more. Serve steaming hot.

Notes

Dolly says: "Grits were always on the table, for breakfast, lunch, and dinner. There's not much to them, but when Mama cooked them, itw as with such love that they always tasted really good."

Leftover Grits: there were never any leftovers in Mama's kitchen, but if you find yourself with some grits still in the pan, wrap them up and put them in the refrigerator. They'll be firm enough to slice up and fry in a bit of butter or bacon drippings for breakfast in the morning.
