Nancys Potato Salad

Ingredients

3 pounds red potatoes

8 eggs

1 cup celery thinly slice

1 small onion diced

1/2 cups sliced green onions

1 1 /2 cups Mayonnaise more if needed

1/2 cups Miracle Whip

1/4 cup half and half more or less if needed

1 Tablespoon Prepared yellow mustard

1 Tablespoon distilled white vinegar

1 Tablespoons sugar

1 1/2 teaspoon salt

1/2 teaspoon pepper

Directions

Cook eggs in instant pot;

1. Bring a large pot of salted water to a boil add 1/2 teaspoon vinegar. Add red potatoes and cook until tender but still firm about 15 minutes. Drain, cool ,peel and chop into 1 inch cubes.

2. Place in a medium bowl with celery and 6 chopped eggs.

3. In a small bowl whisk together Mayonnaise, Miracle whip, 1/2 & 1/2, prepared mustard, vinegar, green onions, sugar and salt & pepper. Pour the mixture over the potatoes and mix. Add 2 eggs sliced on top, and sprinkle with paprika. Cover and chill 2 hours or overnight.
