Goat Cheese Stuffed Mushrooms

Ingredients

- 2 tablespoons butter

- 4 oz pancetta (diced)

- 1/2 cup shallots (chopped)

- 2 tablespoons parsley (fresh)

- 1/4 cup white wine

- 1/2 cup breadcrumbs

- 1/2 cup goat cheese

- salt and pepper

-olive oil for drizzle

Directions

Preheat oven to 400.

Clean mushrooms and remove stems. Chop stems and set aside.

Heat butter in saucepan, add pancetta and cook until browned. Add in shallots and mushrooms stems. Cook 2-3 minutes. Add in wine and cook for 5 minutes. Remove from heat.

In a bowl, combine, breadcrumbs, shallot mixture, salt and pepper, parsley. Fold in goat cheese.

Fill in the mushroom caps, drizzle with oil and bake for 15-20 minutes or until browned
