High Protein Key Lime Cheesecake Cup

Ingredients

1 C cottage cheese

2 TB sweetener of choice (powdered monk fruit, organic powdered sugar, maple syrup, or honey)

Zest of 1 lime

Juice of 1 lime

Blend all ingredients together, this will take a couple of minutes and you’ll have to scrape the sides a couple of times

Transfer to a small dish and smooth out the top. Optional to freeze for 1 hour for a more “ice cream” like consistency

Optional to melt 2 tbsp white chocolate chips and spread over top. Top with crushed graham crackers (gf if needed — I used simple mills), and more lime zest 👩🍳💋
