One-skillet Creamy Chipotle Garlic Chicken Pasta

12 oz pasta (penne or rotini)
2 tablespoons olive oil
1 lb chicken breast, diced
Salt and pepper, to taste
4 cloves garlic, minced
1-2 tablespoons chipotle in adobo sauce (adjust to taste)
1 cup chicken broth
1 cup heavy cream
1 cup grated Parmesan cheese
Fresh parsley, chopped (for garnish)
Directions
Cook the pasta according to package directions, drain, and set aside.
In a large skillet, heat olive oil over medium heat. Season diced chicken with salt and pepper, then add to the skillet. Cook until browned and cooked through, about 5-7 minutes.
Add minced garlic and chipotle in adobo sauce to the skillet, cooking for an additional minute until fragrant.
Pour in chicken broth and bring to a simmer. Stir in heavy cream and simmer for 2-3 minutes.
Add cooked pasta and Parmesan cheese to the skillet, stirring until well coated and creamy. Adjust seasoning as needed.
Garnish with chopped parsley before serving. Enjoy your meal!
