Southwestern Kale Power Salad with Sweet Potato, Quinoa & Av

Ingredients

Quinoa and Kale:

1 cup quinoa

1 bunch kale, chopped small

2 Tbsp olive oil

1 medium lime, juiced

1/2 tsp salt

Sweet Potatoes:

2 medium sweet potatoes, diced

2 Tbsp olive oil

2 tsp ground cumin

1 tsp smoked paprika

1 1/2 tsp salt

Avocado Sauce:

2 avocados, sliced

2 limes, juiced

2 Tbsp olive oil

1 jalapeño, chopped

1 handful cilantro

1/2 tsp ground coriander

Salt, to taste

Everything Else:

1 (14 oz) can black beans, drained

1/3 cup crumbled feta

1/4 cup pepitas

Directions

Cook the quinoa, set aside. Sauté the sweet potatoes, season with cumin, smoked paprika, and salt. Massage kale with lime juice and salt. Make avocado sauce by blending ingredients. Combine quinoa, kale, sweet potatoes, beans, feta, and pepitas. Drizzle avocado sauce before serving.
