Grandmas Potato’s Salad (uncle Joes Version)

Ingredients

everything is a rough estimate, I watched Uncle Joe do it and made rough notes)

White Potato’s… (not sure how much, but I suspect 2 lb.)

1/2 pack (1/2 lb) bacon

1 Onion, diced

1/2 a green pepper, diced

2 stalks celery, diced

1 1/2 cup Vinegar

3/4 cup sugar

(Test how much sauce you want, but the ratio should be Vinegar to Sugar - 2:1)

4 hard boiled eggs, sliced

1 tablespoon (or so) of flour

1/4 to 1/2 cup water

Boil white potatoes

Peel and slice when they are still warm.

Cook a half a pack (1/2 lb) of chopped bacon.

Onion, .5 pepper, celery, sautéed in bacon fat

Set aside

In the same pan, add Vinegar to sugar (2:1)

add some flour to thicken, and add some water

Hard boiled egg

Flour to thicken the sauce

add water

Combine everything.

Serve room-temp.
