Cocoa Dusted Seared Scallops

10 Sea Scallops
Salt
Grapeseed oil
1/4 cup good quality unsweetened cocoa powder
1 tbsp ground cinnamon
1tsp ground cloves
1/2 tsp cayenne pepper
Directions
Heat cast iron pan over medium high heat for 5 minutes. Dry scallops well with paper towel. Season with salt. Mix cocoa powder, cinnamon, cloves, and chili powder in small bowl. Dredge both ends of scallops in cocoa mixture. Add oil to pan and gently place scallops on the hot surface. Do not move. Let a good sear develop, about 2 minutes. Flip to opposite end and let cook, undisturbed for an additional 1 1/2 to 2 minutes.
