Chicken Quesadillas

Ingredients

8 Low carb tortillas, soft; burrito sized

8 oz. Colby-jack cheese, 1oz. per quesadilla

Taco seasoning

Chipotle powder

16 oz. Chicken breast, 2oz. per quesadilla

Directions

Fry up chicken breast and add seasoning packet per directions

Portion out 2oz. chicken and 1oz. cheese for each tortilla

In Pam sprayed pan, place tortilla, spread cheese all over; chicken on one half. Let cheese melt and outside crisp a little before folding the tortilla in half. Flip to evenly crisp.

Remove and cut in half.

1 serving is 4 slices (2 tortillas + mixings)
