Lentil Meatballs/ Burgers

Ingredients

1 can green lentils

3/4 cup unseasoned breadcrumbs

Red onion

1/4 cup fresh parsley leaves

1 flax egg

2 Tbsp. tomato puree

1 tsp. soy sauce

garlic

1 tsp. dried oregano

1 tsp. smoked paprika

Directions

Make a mixture by combining ingredients in a food processor. Add salt and pepper.

Pulse, mix until combined- the mixture should be similar to a dough. If too wet, add in more breadcrumbs.

To make meatballs: Use a scooped tablespoon to roll into balls.

To make burgers, split mixture into 4 and shape burgers with hands.

Fry either meatballs or burgers until slightly crisped.

Serve meatballs with sauce, pasta, or grains or burgers in buns with toppings.

Notes

Tamari be used instead of soy sauce.
