Moist lumberjack cake

250 g dried dates (chopped)
1 cup water (hot)
1 1/2 tsp bicarbonate of soda
180 g butter
1 cup caster sugar
2 eggs (lightly beaten)
2 cup plain flour (sifted)
1 1/2 tsp vanilla extract
3 granny smith apple (diced,peeled)
1 cup brown sugar
90 g butter
1 1/2 cup shredded coconut
1/3 cup milk
1 tbs icing sugar (*optional)
Directions
Combine dates, hot water and bicarbonate of soda in a bowl and set aside for one hour.
Preheat oven to 180°C (160°C fan-forced) and grease and line 2 x 20cm round cake tins or one large slab tin.
Beat butter and sugar together until pale and fluffy.
Add the eggs and beat until combined.
Fold in the sifted flour and vanilla.
Mix in the date mixture and apples then spoon mixture into prepared tin. Smooth the top and bake for 40 minutes.
For the topping:Mix all ingredients in a small saucepan and stir over medium heat until well combined. Remove the cake from oven and spoon over the topping to cover.
Return cake to oven for a final 20 minutes, or until cake is cooked through and topping is golden. Cool cake in the tin then dust with icing sugar, if liked, before serving.
