Strawberry Pie

Ingredients

1 baked 9 inch pie shell

1 qt. hulled strawberries

3 T. cornstarch

1 cup granulated sugar

2 T. lemon juice

1/2 cup heavy cream, whipped

1 qt = 2 pints

l qt = 4 cups

Directions

• With fork or pastry blender, crush half of strawberries; stir

in cornstarch, sugar, lemon juice. Cook over medium heat, stirring, until clear and thick- ened; cool. Cut rest of berries in halves; fold into cooled mix- ture. Turn into crust. Refriger- ate until will chilled. Serve, garnished with whipped cream. Makes 1, 9 inch pie.
