Lentil Chili Boats

2 tbsp olive oil
1/3 yellow onion (or 1 and 1/2 cups)
1 bell pepper
1 and 1/2 tbsp salt
1-2 tomatoes or two 15-oz cans
1 can kidney beans
3 cloves garlic
2 tbsp chili powder
2 tbsp cumin
2 cups vegetable stock
1/2 pack or 1 lb dried black/green lentils
2 tbsp brown sugar
2 tbsp sherry or red wine vinegar
Toppings:
Sour cream
Cilantro
Shredded cheese
Jalapeño
Taco shells
Directions
Dice onion and bell pepper
Mince garlic
Into a large pot, add oil, onion, bell pepper and garlic
Add chili, cumin, salt
Add stock, tomatoes, lentils and bring to a boil
Reduce heat and cover for 25-30 minutes
Add beans, sugar and sherry. Reduce heat ti low and stir
Serve as a veggie take on tacos
