Cilantro Chimichurri Sauce Recipe

Ingredients

1 bunch of fresh cilantro (stems and leaves)

1 bunch of Italian flat leaf parsley

3 cloves of garlic (peeled)

1/4 of a small red onion, peeled and cut into chunks (you can use a shallot for a less strong onion flavor)

2 tsp red pepper flakes

2 tsp of dried oregano

2 tbsp red wine vinegar

1 cup olive oil

Salt and pepper to taste

Directions

In a blender, or food processor, add the cilantro, parsley, garlic, onion, pepper, oregano, vinegar, and 1/2 of the olive oil

Pulse to mince the ingredients

Add the remaining olive oil and gently stir to combine

Tranfer the sauce to a mason jar and let it sit 20 minutes at at room temp before serving
