Jalapeño Popper Chicken Lettuce Wraps

Ingredients

3 chicken breasts (cooked, shredded)

1/2 cup plain greek yogurt

1/4 cup cream cheese

1 cup sharp cheddar (shredded)

1/2 cup jalapenos (chopped)

1/2 cup bacon (crumbled)

1 tbsp fresh chives

2 garlic cloves (minced)

1 lime (juiced)

1/2 tsp paprika

1/2 tsp black pepper

1/2 tsp onion powder

salt to taste

lettuce (for serving)

Directions

Begin by shredding your chicken breasts using two forks, or a hand mixer. Season the shredded chicken with salt and pepper.

To a large mixing bowl, add the shredded chicken followed by the rest of the ingredients.

Mix well, and season with salt at the end.

Sammys tip: if you want the mixture slightly creamier, add a few more tbsp of greek yogurt.

Add the jalapeño popper chicken mixture onto your favourite salads, in lettuce boats, in a tortilla wrap, on top of crackers, or serve along side your favourite veggies.
