Basic:
Mashed potato leftovers
Samosa style:
Potatoes
Onion
Peas
Salt and pepper
Curry powder
Directions
Rinse and peel potatoes, chop into cubes
Cook in water and salt until tender
Dice onion and sauté
When potatoes are soft, drain water
Combine onion and potatoes, mashing a bit with wooden spoon
Add frozen peas, salt, pepper and curry. Let cool
Line a baking tray with parchment paper
Cut each dough squares into two triangles and fill
Fold into a pyramid shape by joining the two base points and then folding the top point in toward the base
Place on baking tray and bake at 360 F
