Lobster Bisque

1 quart prepared Lobster Bisque
1/2 diced yellow onion diced
2 stalks celery diced
1 carrot diced
2 tbsp olive oil
1/8 tsp white pepper
1 tbsp creole seasoning
1 bay leaf
1/2 lb raw shrimp
1/2 lb crawfish tails
Directions
Heat olive oil in large stock pot over med high heat.
Add onion, carrot, and celery and cook stirring for about 3 minutes. Leave a bit of the crunch in the vegetables for texture. Season with salt. Add prepared bisque, white pepper, bay leaf, and creole seasoning. Let simmer for about 15 minutes to meld flavors. Stir in raw shrimp and crawfish and cook an additional 5 minutes.
Meanwhile, combine the avocado and sour cream in blender and blend smooth. Ladle the soup into heated bowls and top with avocado cream and a sprinkle of chopped green onions.
