Basic Shakshuka

Yellow onion
3-4 garlic cloves
Red pepper
Jalapeño
Tomatoes
Optional tomato paste
Salt
Pepper
Paprika
Cayenne
Cumin
Directions
Slit tops/bottoms of tomatoes and submerge in boiling water
Dice onion, bell pepper and jalapeño
Mince garlic
Peel off tomato skins and dice
Add olive oil to a pan and sauté onion
Once golden brown, add garlic and cook for a bit
Add bell pepper and cook for a few minutes
Add tomatoes, stir and cover until the tomatoes soften and lose their shape
Optionally add tomato paste
Add seasonings
Once the sauce looks ready, crack in eggs
Cover with lid and cook until eggs look ready
Serve with rustic bread
