Best Chocolate Chip Cookies

**CREAM**
1 cup butter, softened
1 cup white sugar
1 cup packed brown sugar
**Beat In**
2 eggs ( room temp)
2 teaspoons vanilla extract
**DISSOLVE**
1 teaspoon baking soda
2 teaspoons hot water
½ teaspoon kosher salt
**STIR IN**
384 grams all-purpose flour ( 3 cups )
2 cups semisweet chocolate chips
1 cup chopped walnuts
Directions
PREHEAT: ( Convection ) to 325 degrees F. ( CHECK )Bake for about 10 minutes in the preheated oven, or until edges are nicely browned.
1. Cream together the butter, white sugar, and brown sugar until smooth.
2. Beat in the eggs one at a time, then stir in the vanilla.
3. Dissolve baking soda in hot water. Add to batter along with salt.
4. Stir in flour, chocolate chips, and nuts.
5. Drop by small scoop silver handles onto UNGREASED pans.
Notes
Use brown pans no sides: Number ; 4 large pans and one small
4 across and 3 down use small scoop
