Ingredients

1 cup cornflake crumbs

1/2 cup reduced-fat pancake and baking mix

1/2 teaspoon paprika

3/4 pound boneless, skinless chicken breast halves, cut into 1-inch pieces

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

Directions

Preheat oven to 400 degrees F. Line a baking sheet with foil and coat with cooking spray.

In a large resealable plastic bag, mix together cornflake crumbs, baking mix, garlic powder, salt, pepper, and paprika. Add chicken pieces and shake to coat. Place on prepared baking sheet. Spray chicken with cooking spray.

Bake 12 to 15 minutes, or until chicken is no longer pink. Serve immediately.
