Wild Rice Soup

Ingredients

3 cups chicken stock

1/3 cup Wild Rice (Wash Well), uncooked

1/2 cup green onions, sliced

1/2 cup carrots, shredded

1 cup 1/2 and 1/2 or milk

2 Tablespoons flour

1/8 teaspoon pepper

parsley or Chives

Directions

1. In a medium saucepan combine broth and rice. Bring to boiling reduce heat . Cover and simmer 45-50 minutes or until tender. Stir in onions and carrots during last 5 minutes of cooking.

2. Combine cream, flour, and pepper. Stir into the mixture. Cook and stir till slightly thickened and bubbly. Cook and stir 1 minute more.

3. If desired stir in sherry. Garnish with parsley or chives
