The Best Healthy Veggie Soup Ever

2 tbsp olive oil
1 cup diced onion
2 cups diced carrots
1 cup diced celery
5 cups veggie broth
1 15 oz can diced tomatoes
1 cup cut up green beans
1 cup chopped kale
1 tsp salt
1/2 tsp pepper
1 cup parsley
2 cups cooked brown lentils (i use pre cooked from Trader Joe’s
2 cups cooked jasmine rice
how to:
Directions
In a large soup pot, sauté onion, celery and carrots in olive oil for 5 minutes.
Add in green beans, veggie broth, tomatoes, pepper, salt and parsley. Simmer for 20 min.
Add in kale, let it wilt for 2 min.
Add in cooked lentils and cooked rice, and serve with your fave crusty bread.
