SMOKED CEDAR PLANK SALMON

1 wild salmon filet cut into 5-inch-wide pieces
1 Tbsp. olive oil
2½ tsp. BBQ rub (page 13),
½ tsp. per piece of fish
3 sprigs fresh thyme
1 lemon, sliced
Directions
Soak wood plank in water for one hour.
Light grill and set up for indirect heat at 325°F.
Rinse fish in cold water, and pat dry.
Evenly coat each piece of fish with olive oil and place fish, skin side down, on a soaked cedar plank.
Season each piece of fish with BBQ rub and fresh thyme, and place a slice of lemon on top.
Place planked fish on grill over indirect heat, close lid, and allow to cook till internal temperature reaches 135°F (about 20 minutes).
Remove from grill and serve on plank.

I know what you're thinking. Matt, why am I putting my perfectly good salmon on a plank of wood? I promise, there's a reason other than Instagram photos, although I admit it makes for a great picture or two. Putting salmon on a cedar plank is a great, practical way to cook fish beautifuly The plank allows for easy handling, as salmon can split or fall into chunks when you're trying to shift or flip it on a grill. The plank is also a great way to infuse your fish with subtle smoky flavor without
burning or overcooking it.
