Blueberry Pie

4 c. blueberries
1 T. fresh lemon juice
¾ c. sugar
3 T. corn starch
½ tsp. finely grated lemon zest
1/4.tsp. salt
¼ tsp. ground cinnamon
1 T. cold unsalted butter, cut into small pieces
Directions
1. Preheat oven to 375
2. Zest, then juice the lemon
3. Place the berries in a large bowl, sprinkle with lemon juice, and toss to coat evenly.
4. In a small bowl, stir together sugar, cornstarch, lemon zest, salt, cinnamon.
5. Sprinkle the sugar mixture over the berries and toss to evenly distribute
Immediately place into pan with dough.
6. Dot with butter. Place dough on the top of berries. If solid piece,
slits to allow steam to escape during baking.
7. Bake for 50-60 minutes until the crust is golden and filling is thic bubbling. Let cool on wire rack until set.
