Panino Con purpuzzo- Sardinian Sausage Sandwich

1 package spicy Italian sausage
Red pepper flakes, fennel seed, oregano (optional)
3 cloves garlic
2/3 cup white wine like vermentino
4 ciabatta rolls
Directions
Brown sausage and red pepper flakes/spices in nonstick pan, adding olive oil if needed. When brown add garlic minced for 30 seconds of stirring. Then add wine and cook down until alcohol evaporates and it becomes more of a sauce with meat juices. Dip sliced ciabatta in that sauce and spoon sausage into bread. That is it.
