1 packet (2 1/4 tsp or 7g) active dry yeast

4.5 tsp granulated sugar ~1 cup water, divided 3.5 cups bread flour

2 tsp kosher salt

Water + 2 tbsp molasses for boiling

Pizza Sauce

1 cup tomato purée

3 oz (6 tbsp) tomato paste

1/2 tbsp dried parsley

1/2 tbsp dried basil

1/2 tbsp dried oregano

1/4 tsp garlic powder

1/4 tsp onion powder

1 tsp salt

1/8 tsp black pepper

1/2 tsp sugar

Directions

Add yeast to 1/2 cup of warm water and sugar. Let sit for a few minutes until a foamy head develops (~5 mins), then whisk to combine.

Mix salt and flour in a large bowl, then add in yeast mixture. Stir using a sturdy spatula. Keep adding warm water and stirring until you have a dry, shaggy dough. It will probably take 1/2-3/4 cup of water.

Turn out onto a floured surface and knead for 10 minutes. Your dough should be fairly dry and tough. Move to an oiled bowl, cover with a damp towel, and proof for 1 hour, until doubled in size.

Preheat oven to 425F.

Punch down the dough, then cut into 16 equal potions. Roll each pieces into a ball & pinch together, then roll the seam on a non-floured surface. Use your fingers to poke a hole through the middle.

Bring ~12 cups water to a boil and add molasses.

Boil bagels for 30 seconds, then flip and boil for another 30. Transfer to a piece of parchment paper set atop a cooling rack and bake for 8-11 minutes until they're golden brown on top.

Stir together all of the sauce ingredients. Cut the bagels in half and top with sauce, cheese, and pepperoni (optional). Air fry at 350F or bake at 375F for 13-15 minutes.
