Dad’s Potato Salad

Ingredients

1 bag red potatoes (cut into chunks & boiled)

6 hard boiled eggs, chopped

1 cup chopped celery

1 cup chopped onion

1/3 cup chopped pimento stuffed green olives

1/3 cup chopped sweet gherkin pickles

Helmans mayo (eyeball)

Season w/ salt, pepper & paprika

Directions

  1. Cut potatoes into 1” cubes

  2. Boil potatoes for 15 mins or until soft

  3. Let potatoes cool

  4. Add the rest of ingredients

  5. Sprinkle with paprika if desired. Chill for at least 1 hour or overnight before serving.
