Coconut Lemon Syrup Cake

Ingredients

125g butter

1 3/4 caster sugar

3 large eggs

2 cups coconut

1 cup SR flour

Syrup

1 cup sugar

2/3 cup water

1 lemon (juice + zest)

Directions

Cream butter & sugar. Beat in eggs one at a time. Stir in the flour & coconut.

Bake in moderate oven for 45 minutes.

Pour hot syrup over hot cake & cool in the pan (not boiling hot).
