Roasted Carrot Soup

Ingredients

10 carrots, peeled and thick chopped

3 shallots

1 head of garlic top sliced off

Cumin, chili flakes, black pepper, fresh thyme, olive oil (roast coat)

1 liter chicken broth

Directions

Roast all ingredients except chicken broth at 375 for 45 mins in baking dish. Pull out and let cool 10 min. Discard thyme and garlic husk. Throw everything in with broth and blend. Salt and pepper to taste. Can add more pepper flakes or zataar for different flavor. Less or more chicken broth for thickness adjustment.
