German Potato Pancakes

2 eggs
1/2 small onion
2 1/2 medium potatoes
2-3 Tablespoons flour
1/2 teaspoon salt
1/8 teaspoon nutmeg
Directions
1. Blend eggs and onion in blender.
2. Peel and chuck 2 1/2 potatoes. Blend each potato briefly as added.
3. Add thickening and salt to mixture and blend/
4. Add butter and oil to medium hot skillet for each new batch of pancakes, followed with potato batter to cook. Add about 1/4 cup bater and spread as thin as possible with wooden spoon.
5 Cook until golden brown around edges.
6. Serve with maple syrup or applesauce.
