Soy Sauce & Mustard Baked Salmon and Roasted Potatoes

2 skinless salmon fillets
(8-10 oz. each)
2 large potatoes
2 tbsp mustard
1/2 cup soy sauce
1/2 cup heavy cream
1/2 lemon, juiced
1 rosemary sprig
2 tsp salt
2 tsp pepper
2 tsp garlic powder
2 tsp oregano
2 tsp lemon pepper seasoning
Chopped parsley as a garnish
Directions
1) Preheat the oven to 375°F.
2) Peel and chop the potatoes into 1/2-inch chunks, put them in a large roasting tray or baking sheet, and sprinkle with olive oil.
Season with salt, pepper, garlic powder, and lemon pepper seasoning and bake for 20 minutes. Turn them, and cook for 15 more minutes.
3) In a small pot, mix together the heavy cream, soy sauce, mustard, salt, and pepper.
4) Place the two salmon fillets in an oven-safe • dish, top them with lemon, salt and pepper; cover them in the sauce; and wrap the tray in aluminum foil.
5) After the potatoes have been in the oven for 10 minutes, put the dish of salmon (still in the sauce) into the oven and keep it covered with foil.
6) After 15-20 minutes, the salmon should be perfectly cooked and tender and the edges should be starting to caramelize.
7) Keep the extra sauce in the pan for pouring over the salmon.
8) Serve with a sprinkle of chopped parsley.
