Lamb Riblets with Mint

Ingredients

~8-10 lamb riblets

½ tsp garlic, minced finely

1 tsp fresh rosemary, minced or ground

1 tsp dried mint, ground

1 tsp salt

¼ tsp pepper

2 tbsp olive oil

Directions

Mix the garlic, ground rosemary, mint, salt, and pepper. Set aside 1/2 tsp for the potatoes.

Rub riblets with the herb mixture and let sit for an hour.

Heat the grill on high. Grill the riblets for 2 minutes on one side then one minute on the other side.

Oven roast or microwave (for 5 minutes) baby potatoes. Put whole in a bowl, add some butter and the herb marinade, stir and serve with the lamb.

This dish goes really well with yogurt with cucumbers.
