• 2 cups flour
• ¾ cup sugar
• 1 ½ tsps baking powder
• ¾ tsp salt
• ½ tsp baking soda
• ¼ cup butter, softened
• 1 Tbsp grated orange rind
• ¾ cup orange juice
• 1 large egg
• 1 cup fresh or frozen cranberries, chopped
• ½-¾ cup chopped pecans
Optional glaze:
2 cups powdered sugar
2 tsp heavy cream
1 zested orange
Directions
1. Preheat oven to 350°F. Grease the bottom only of a loaf pan.
2. In a large mixing bowl, combine flour, sugar, baking powder, salt and baking soda; stir in butter until mixture is crumbly.
3. Stir in orange rind, orange juice and egg just until moistened; stir in cranberries and nuts.
4. Pour batter into prepared loaf pan and spread until top is smooth.
5. Bake 55-75 minutes (depending on loaf pan size); cool 5 minutes.
6. Loosen sides and remove from pan to a cooling rack. Cool completely before slicing.
Note: Make ahead of time and freeze.
