Long Life Noodles (伊面)

In a large pot, heat some water to a boil and add your Yi Mien noodles. Cook them for 3-4 minutes, or until they are just cooked through but still firm and chewy (like al-dente pasta). Don’t overcook them here. Drain the noodles and set aside.
Dissolve the sugar and salt in 1 tbsp of hot water, then add the light soy sauce, dark soy sauce, oyster sauce, sesame oil, and white pepper to form the sauce, stirring until combined.
Heat the wok until smoking, then spread 2 tbsp of neutral oil. Add the mushrooms and light green part of the chives, and stir fry for 30 seconds over high heat. Check if you need to add more oil, then add the cooked noodles. Stir fry for another 20 seconds.
Once the noodles are warmed back up, spread the sauce evenly over the noodles and stir-fry everything together for another minute. Add another tbsp or so of oil if you need it to prevent the noodles sticking together, but be conservative. Mix gently so as not to break any of the noodles.
Add in the remaining dark green parts of the chives and mix until they turn bright green and everything is warmed up nicely, 1-3 minutes. Serve warm and enjoy!
Directions
12 oz Yi Mien noodles (dry, try to get these or another similar style noodle)
8 oz Chinese chives (garlic chives), cut into 2 inch long pieces, light and dark green parts separated.
5 shiitake mushrooms, thinly sliced (fresh or dried and reconstituted)
3-4 tbsp neutral high-heat oil
2 tbsp oyster sauce
1 tbsp hot water
2 tsp light soy sauce
2 tsp dark soy sauce
½ tsp sesame oil
¼ tsp salt
⅛ tsp sugar
Notes
Flavorful dish featuring really long noodles, commonly served during Chinese celebrations like Chinese new years. The long noodles symbolize longevity and long life. This is really quick to make and can be spiced up with the chili oil of your choice.
