Beef Burrito Skillet Meal

1 (lb) lean ground beef (93/7)
1 package (1 oz) taco seasoning
1/2 cup water
1 can (10 oz) enchilada sauce or
1 can (15 oz) black beans, drained and rinsed
1 cup frozen corn, thawed
6 taco sized flour tortillas (or 3 burrito sized) cut into 1" strips
2 cups shredded mexican blend cheese
cilantro and sour cream for garnish (optional)
Directions
In a medium skillet, cook ground beef until there is no longer any pink showing; 7-9 minutes. After beef is cooked, drain fat completely and return beef to the pan.
To the beef add taco seasoning, water and enchilada sauce (make my homemade enchilada sauce if you like). Continue to cook over medium heat for 3-5 minutes until mixture begins to thicken.
Reduce to a low heat setting and add black beans, corn and tortilla strips. Cook for an additional 3-4 minutes, stirring gently.
Sprinkle the cheese over top of the dish and stir in just long enough for it to melt.
Remove from heat and serve immediately with any garnishes of your choice.
