2 cups dry pinto beans
1 tablespoon avocado oil
½ white onion, chopped
1½ teaspoons ground cumin
8 cups water, plus more as needed
½ teaspoon dried oregano
2 teaspoons sea salt, plus more to taste
Freshly ground black pepper
1 tablespoon fresh lime juice, plus more to taste

Optional additions
1 jalapeño pepper, stemmed and diced
Chili powder, to taste
Fresh cilantro, for garnish
Directions
Sort out rocks and shit
Rinse well
Cover with 2 to 3 inches of water
discard floaters
Soak (room temp) (minimum 8 hrs)
Rinse

Pot or Dutch oven:
Sauté onion (5min) (Optional) add jalapeño
Add and bring to boil:
Cumin
beans
water
oregano
salt

Reduce the heat and simmer, uncovered, until tender.
Check starting at 1 hour + every 15 min after
Add liquid as needed - keep beans submerged
cook until starting to fall apart and bean liquid around them has thickened
