Marinated Flank Steak

Flank Steak (about 5 pounds)
SESAME MARINADE:
1/4 cup sesame seeds, toasted
12 green onions, chopped
10 cloves garlic, chopped
1 1/4 cup soy sauce
1/4 cup oil
1/4 cup brown sugar
1/4 cup white wine
GINGER MARINADE:
1 cup dry red wine
3/4 cup red wine vinegar
1/4 cup dark sesame oil
1/2 cup olive oil
5 garlic cloves, sliced into ovals
3 tablespoons fresh ginger,
coarsely chopped
3 teaspoons fresh thyme or 1 tea-
spoon dried
HONEY ORANGE MARINADE:
1 1/2 cups fresh orange juice
2 tablespoons peanut oil
1/4 cup white wine vinegar
3 tablespoons tamari or soy
sauce
1 tablespoon raw honey
White pepper to taste.
Directions
Choose one of the options on
the left and combine all ingre-
dients for that marinade.
Coat flank steak, marinate a
minimum of 12 hours, and
flip several times during day.
Bring to room temperature
before grilling. Grill until
rare or medium rare. To
serve, slice on the diagonal.
