Creamy Cheesy Chicken Pasta

Ingredients

8 oz elbow Pasta

1 lb chicken breast, diced

- 2 tablespoons olive oil

- 3 cloves garlic, minced

- 1 cup sun-dried tomatoes, chopped

- 1 cup spinach leaves

- 1 cup heavy cream

- 1 cup chicken broth

- 2 cups shredded mozzarella cheese

- 1 cup grated Parmesan cheese

- Salt and pepper to taste

- Italian seasoning (optional)

- Fresh basil for garnish (optional)

Directions

1. Cook the Pasta according to package instructions; drain and set aside.

2. In a large skillet, heat olive oil over medium heat. Add the diced chicken, season with salt and pepper, and cook until browned and cooked through. Remove from skillet and set aside.

3. In the same skillet, add garlic and sauté for about 1 minute until fragrant. Then, add sun-dried tomatoes and spinach, cooking until the spinach wilts.

4. Pour in the heavy cream and chicken broth. Bring to a simmer and reduce slightly.

5. Stir in the mozzarella and Parmesan cheese until melted and creamy.

6. Add the cooked Pasta and chicken back into the skillet, stirring to combine. Adjust seasoning with salt, pepper, and Italian seasoning if desired.

7. Serve hot, garnished with fresh basil if using.
