Chai Peanut Butter Blossoms

1/2 cup shortening or butter
1/2 cup peanut butter
1/2 cup granulated sugar
1/2 cup packed brown sugar
1 teaspoon baking powder
1/8 teaspoon baking soda
1 tsp corn starch
1 egg
2 tablespoons milk
1 teaspoon vanilla
1/4 tsp salt
1 3/4 cups all-purpose flour
1/4 cup granulated sugar + 1 tbs chai mix
(12 ounce) chocolate truffles or pb cups
Directions
Preheat oven to 350.
In your electric mixer's bowl, beat the shortening (softened) and peanut butter on medium to high speed.
Beat until well combined and"fluffy", occasionally scraping the sides of the bowl.
Beat in egg, milk, salt and vanilla until well combined.
ina separate bowl whisk together the dry ingredients (flour, baking soda/powder, corn starch, chai mixture.)
slowly add dry mixture to wet mixture, until combined. do not over mix.
Shape cookie dough into one inch balls.
Roll the balls (individually) in the 1/4 cup granulated sugar
Place balls 2 inches apart on an ungreased cookie sheet.
Bake for 10 to 12 minutes, until bottoms are lightly browned.
Do not overbake.
Immediately press a Truffle / pb cup into the center of each cookie.
Transfer cookies to a wire rack to cool.
