Ingredients

2x recipe Laurel’s tomato sauce

3/4 lb lasagna noodles

2 cups cottage cheese

3 cups grated mozzarella

2 bunches spinach

1/2 cup grated Parmesan

3/4 cup walnuts, chopped and toasted

Directions

Wash spinach, shake dry. Cook with no added liquid. Squeeze to drain and chop fine .

Cook noodles until almost tender, cool under cold water and layout.

Grease 9x13x2 1/2 baking dish and assemble with alternating noodle orientation:

1/2 cottage cheese + 1/4 Parmesan + sauce

Noodle 2

Spinach + mozarella + sauce

Noodle 3

Cheese + nuts

Noodle 4

Sauce + nuts + cheese

Bake 350 30mg cool for 10 min
