Macaroon Fruit Dip
2 1/2 - 3 cups

2 cups sour cream
3 Tbsp firmly packed light brown sugar
10 macaroon cookies, broken into small pieces
Directions
In a medium bowl, combine sour cream, brown sugar and cookie pieces. Mix well. Refrigerate at least 1 1/2 hours. Serve with assorted fresh fruit; strawberries, bananas, apples, melon, pineapple, etc and crackers (sweeter graham cracker type). Top with toasted coconut.
Notes
This recipe is great with either a soft Archway macaroon cookie or a hard cookie. If you love coconut or pina coladas, you’ll love this appetizer or light dessert.
