Finnish Salmon Soup (Lohikeitto)

2 tbsp butter
3 carrots, peeled and chopped
2 small yellow onions
1 lb of russet potatoes (about 2 potatoes)
5 cloves of garlic
5 cups chicken broth
1 pound salmon fillet, skin removed
1/2 cup half and half
1/2 lemon (juiced)
2 tbsp fresh dill

Directions
Place a pot with butter over medium heat. Add the onions saute for 3 minutes. Season with salt then add carrots and potatoes and saute another 2-3 minutes until onion is fragrant and lighter in color, stirring occasionally. Then add garlic and saute 1 minute.
Add in the broth, salt pepper and dill and bring to a boil, then cover with a lid and simmer for 15 - 18 minutes or until the potatoes are cooked and soft.
Cut the salmon fillet into small pieces. Add the fish and the cream to the soup and stir to combine. Cook for another minute (uncovered), then remove from the heat, cover with a lid and set aside for 4 - 5 minutes for the salmon to cook. Add the lemon juice and divide the salmon soup between four plates and sprinkle it with more fresh dill.
